So Santa Fe already has a truly stellar place for ramen in Shibumi, but the ramen bar at the new Talin Market is still a nice little addition to the city.
Everything is build-your-own, so you choose your broth (miso, tonkatsu, etc.), then your noodles (standard ramen, spinach, glass noodle), and then your additions (sliced pork, shiitake, enoki, raw egg, fresh chile...), and you're off to the races. Given that I often dine solo at lunch, I like that it's counter service.
The quality was totally fine, although a far cry from Shibumi (and they don't have any of Shibumi's izakaya small plates or alcohol). The value was generally good (my tonkatsu with three additions was under 10 bucks) although there were a couple of oddities in their pricing structure, notably charging 75 cents for green onion.
The room is very clean, at least for now seeing as it just opened. Service is somewhat flaky and apathetic, which is to say it fits in very well in this town.
The good news: there's an espresso bar next door! The bad news: it's Ohori's and the coffee sucks.
