I have to go to multiple thanksgiving dinners Thursday and the last one I have to go to, I need to bring sweet potatoes to. When I make sweet potatoes, I peel them, slice them into 1/4 inch slices and fry them in butter and garlic and a little sugar. The hardest and most time consuming part of this dish is prepping the sweet potatoes...peeling and slicing them. I was wondering if I could do this ahead of time....like the night before or the morning of, but I have had sweet potatoes brown slightly in the past if I let them sit too long. I was wondering if there was a good way to keep them from browning. I thought of using lemon juice like with apples, but for this dish, that would change the flavor too much. Other ideas?
