not sure if anyone has made this but this was a favorite childhood treat made by my french canadian mom.
bake a medium potato- not a yukon gold
after baking take off the skin
add enough powdered sugar to make a soft barely spreadable fudge and smooth it on a tray a little more than a quarter of an inch thick
let this harden then spread soft peanut butter over the top- chunky seems to work best
then fold the white fudge over the top and refridge a bit more
when you cut it into slices it tastes a bit like a soft abba zaba.
you can try flavors, but they never seem right to me.
