I ate at the Oaxacan restaurant near the airport (4773 Belmont) in Fresno on Thanksgiving. It was really great. Loved the Mole Negro (great rich flavor, but not spicy-hot so my kids could enjoy it). Loved the tortillas and beans and the Oaxacan-style tamales. The lamb barbacoa was good too. The guacamole was great and the salsa served with the pre-meal chips was stunning. Price was low, service was friendly.

If you're in Visalia, try Alehandro's on Main. Not sure I got the spelling right. Good fresh mexican food. Not as regionally distinct as the Oaxacan place in Fresno, but still good.
Oh, and I heard that Mearles (sp?) in Visalia burned down. The Taylor hot dog stand looked like it was doing a booming business, but I only have so much stomach capacity and I'd already filled it at Alehandro's.
