old world italian sausages that have fennel and burgundy wine in it and are slowely aged in cool houses? please let me know. i have an old fashioned hand crank sausage maker, but i can't make them here in oklahoma as we do not get the hard freeze winters we had in michigan to slow age them and i cannot afford the expensive refrigeration that would replicate that environment. any help?
