What I'm looking for is a sushi restaurant that has the freshest and possibly rarest selection of fish. I've been to Hiro Sushi and perhaps it was an odd day, but I didn't think too highly of the place. The last few years I've lived in San Francisco and Hawaii and while I do not expect the freshness of what can be had in Hawaii, I have hope in there being a place in Toronto.
What am I looking for other than freshness? Selection... Cuts like oh-toro and fatty hamachi. Stuff that the cookie cutter sushi restaurants never get and/or don't have a clientele for. Basically, the sushi chef needs to be as obsessed about fish as I am.
Does such a place exist in Toronto?
