Best pizza in NY that's not too cheesy for a picky eater?

I grew up in NJ eating good pizza, moved to the west coast, and now abstain unless I'm back in NY/NJ. Problem is, I don't know where to go. I like Joe's Pizza on Carmine Street, although it's not out of this world or anything. I also like that $1 slice place on St. Mark's, although that's nothing special, either, and not as good as Joe's. I love Kinchley's Pizza in Ramsey, NJ if anyone knows what I'm talking about.

I'm pretty disgusted by melted cheese in general, except on good NY pizza (that's not too cheesy). I like it plain, you know, a tasty tomato sauce and mozzerella (but again, not too much cheese).

Slices are good, as are places with pies. Thin crust only.

What can I say? I'm picky about my pizza. Any suggestions? I'm going off my "primal" diet for this trip back east and want to eat well. :)
