I know this is not the season for this suggestion, but if you grow tomatoes, keep it in mind.
We had a lot of green tomatoes at the end of the growing season and I was not inclined to try to ripen them by wrapping in newspaper and bagging them.
My daughter gave a recipe for bread and butter pickles a few years ago. I used the pickling solution from the recipe to pickle the tomatoes. I cored and sliced the tomatoes, and followed the recipe. It worked very well.
The pickled tomatoes are a great condiment for cold cuts sandwiches and burgers. Why didn't I think of this years ago?
