Since forever, the only cream cheese brand I've ever used has been Philadelphia. Most every other brand I've seen has various gums and stabilizers. Those cream cheeses have seemed "shiny" and with a different texture than my beloved Philadelphia. Perhaps I've never noticed the Philadelphia brand ingredients, but yesterday when I opened up a brick, it had that "shiny" look, and the ingredient list was similar to the other brands I've seen. This really is a question, versus a statement, as I might be completely incorrect in what I am surmising. Is it possible that Philadelphia has changed their cream cheese recipe?
