The eggplant wedge I used to get at Pasta Fair in West Haven CT was the best I have had anywhere! The eggplant was thinly sliced and cooked to perfection. It was piled up and served on a crispy-on-the-outside, soft-and-chewy-on-the-inside grinder roll, all coated with great sauce and cheese. It was sublime! Alas they are now closed - has anyone come across a great eggplant wedge in the same area?
