Just want to share my favorite Passover cookie recipe. These are fantastic. The recipe is paraphrased from Marcy Goldman's "A Treasury of Jewish Holiday Baking," a standby in my kitchen. [KP is kosher for Passover.]
1 1/3 c brown sugar
1/2 c white sugar
1 T KP vanilla sugar or 1 t KP vanilla extract
3/4 c unsalted butter or KP margarine
1/2 t salt
1 c matza cake meal
1 c potato starch
2 c KP chocolate chips
In a large bowl cream sugars with butter/marg. Mix in eggs, then dry ingredients. Stir in choc chips. For thin cookies, form immediately. For thicker, chewier cookies, refrigerate 1 hour or up to overnight.
Line 2 cookie sheets with parchment or pan liners. Placedough on cookie sheets by scant tablespoonsful, leaving room for spreading. Press down a little if using cold dough.
Bake at 350F for 12-15 min, then let cool about 20 mins before removing from pans. Finish cooling on wire racks.
Yield: about 4 dozen.
