Will be visiting next month and love oysters. Technically not in season, but I hear variations of the following:
1. The farms now trick the oysters so that there is really no off season -- raw oysters are fine;
2. It is off-season -- the raw oysters are mushy -- go with fried or barbecued.
Which is correct? Am I missing something that would make them both correct?
