I'm trying to expand my palette to include organ meats. My fear is that if I eat horribly cooked offal, I wont be willing to try it again.
Are there any chefs in the Phoenix metro area who specialize in, or make fantastic offal dishes?
Got car. Can travel. Not afraid of distances.
I searched the boards and the only thing that came up was Methode Bistro, and some posters indicated it was going mainstream.
