noticing Latino influence in NOLA kitchens?

If you're living in New Orleans now, it's impossible to miss the iunflux of Latino people working on the recovery effort. I've started to see their influcence show up in local food.

I went to a diner downtown the other day and instead of the usual black eyed peas and cornbread they had pinto beans and tortillas as a side.

Have you seen similiar examples?

I think it would be a good thing if the city's variety and quality of Latino food expanded because of all this.
