I recently had the chance to dine at a restaurant called Bezu in Potomac, MD. Everything was absolutely amazing, but their tuna appetizer impressed me the most. It was thinly sliced ahi tuna wrapped in nori with a very light tempura crust. Melted in your mouth like butter. It was served with this delicious soy mustard vinaigrette, which I really have no way of describing and don't expect to be able to replicate.
Has anyone ever dined on this type of tuna before? Would you know how I could cook this at home? I'd imagine it takes a very quick flash-fry to cook the tempura crust.
