Too many restaurants are just inconsistant. I have a few good meals there over a few months or a year and I think I have a great place, but then I don't know if they get burned out or just tired but they don't keep up the energy.

Classic example: Last night I went to Jean-Michel in Bethesda. I have been there a number of times before and they had been very consistent service with excellent food. Last night I was not impressed. The Fois Gras seemed "out of a can" and not fresh. The service was weak at best. My soufle came out undercooked, the waitress did not even say anything. She just wisked it back to the kitchen and appeared again maybe ten minutes later with the same soufle (It had the same opening from the spoon). I assume they stuck it back in the oven. I always thought the soufle would collapse under such an instance. She did not even say anything just put it back down on the table. I was so turned off to it that I asked "Please, just take it back".

Anything can come out undercooked needing another few minutes, but service is everything.
