The title says it pretty well. I ate at Minibar last night and feel like I wasted $230.00 (food, tax, and tip alone). I'm a foodie and something of a food snob. I have an adventuresome palette. But, good god, the food at Minibar is just plain lousy. Ive been to all of Jose Andres other restaurants except the Bethesda Jaleo and, mostly, I like them.
So many of the dishes (Watermelon "air," cantaloupe ravioli, etc.) are science experiments rather than something one would ever order voluntarily or prepare at home. Theyre not worth the effort. Yes, there are a few interesting ideas (e.g. deconstructed white wine) but a few dishes (foie gras with cotton candy) that are just gross .
A lot of the dishes could make for a good Saturday Night Live sketch. And, for over $100 a person, I shouldnt want a snack when I get home. Innovation has a place in cooking but it's not worth anything on its own. As my fiancé said, the emperor has no clothes.
