I've been eager to visit Curious Kumquat in Silver City after reading about it on this Board. It seems like an interesting place -- an unusual combination of food locally sourced or personally foraged by the chef, and then prepared with some interesting semi-molecular gastronomic techniques.

For this competition, they define artisan food as including but not limited to: "confections, flavored vinegars, pickles and chutneys, salsas, preserves and jams, wines and beers, cured or dried meats - essentially any food that has been treated to have a shelf-life."
