Mexican Restaurant in Orlando/Epcot recommendation

My family and I will be spending the 1st week of January doing the Disney parks. We are from Ohio, but lived in San Diego before that. We are seriously missing the real good mexican restaurants since moving to Ohio (they have NOTHING here near Cleveland). I've read all the posts on Mexican in the area that I can find and was a bit discouraged by some of the comments. Can anyone recommend a great! Mexican restaurant? We will have a car and are willing to drive to a good eatery, but we are going to eat in at our condo the majority of the nights to save money (we have 7 kids so the bill can get pretty expensive!). We would like to eat at atleast one Mexican restaurant and at one of the Epcot country themed restaurants also. Has anyone tried the Indian cuisine in Epcot? We all like Indian food as well. There has been some disscussion on the board about what's 'real mexican' and what's Tex-Mex. Not sure I know which one is what...I just know around here (even when the waiters are Hispanic) you either get low quaility ingredients (fake cheese, Imo instead of sourcream, and very disgusting ground beef etc.) or you get not real Mexican. So I am looking for something like what we got in San Diego...Fresh, high Quality ingredients, with great authentic sauces and salsas...and meat I'm not afraid to eat...and please...NO Fake Cheese!
