Just happened to see something about masala dosa on another board, and it got me to thinking about my one attempt to make them at home. The dosas were great. Nice and fermenty, pretty crisp, but my potato curry filling was pretty awful. My first problem was not being careful with the mustard seeds. I put in too many, and didn't wait long enough for them to pop. In general, the flavor just wasn't there. Any tried and true recipes?
