Inspired by the strawberry-balasamic "gelato" posted by Carb Lover a while back, I made a mango "gelato" with nonfat yogurt tonight. It was absolutely SUPERB. Both the SO and I were impressed with the creaminess of the texture, especially with no fat in the recipe. This is a perfect light summer treat.
3 cups of cubed ripe Kent mangos
5 tbs sugar
3/4 cup Fage Greek Nonfat Yogurt
1 tbs vodka
1/2 tsp vanilla extract
Add sugar to mango and allow fruit to macerate for 30 minutes. Puree mixture in food processor. Press through coarse sieve. Whip in yogurt. Stir in vodka and vanilla. Chill mixture for at least 4 hours. Blend in icecream maker for 20 minutes.
