Strawberry tarts are hardly ever what you hope for. The crust is thick, flavorless, and boring. The flavorless strawberries are swamped by sweet and sticky goo. The pastry cream tastes like library paste. You stare at the dismal creation and you realize why no one ever suggestions have a tart throwing contest instead of a pie throwing contest--liability.
I stopped by Boule this morning after a six or eight week absence. I've been traveling a lot and was a little bored with their line up. I was pleased to see an assortment of fruit tarts including strawberry, mulberry, and white peach. There were also a few other new items I haven't tasted.
This strawberry tart is exactly what I hoped for. Crisp and well baked pastry with a very delicate cream layer supporting superb strawberries. There was the tiniest layer of glaze on the fruit. I appreciated a subtle herbaceous note in either the cream or glaze. Delicious.
