I made the maque-choux from the recipe suggested yesterday. That is a lot of maque-choux! That pan is a 5 qt. saute pan. I am glad I did not use 2 ears of corn per person. There will be 8 of us and it is a side dish. It is quite tasty. I used tasso along with the bacon fat and butter. My corn was not as juicy as I would have liked so I ended up adding a bit of cream.
