Thanks to this board, I've made fabulously delicious and easy Carolina pulled pork in a crock pot, 10-12 hours on the low setting with cider vinegar and hot sauce. But today's (oops, not a loin) shoulder is smaller than usual - just over 4 lbs. Will it be done in 6-8 hours? Or does the alchemy take 10-12 hours?
Going on an Italian side trip this time, porchetta style. CIder vinegar with chile flakes, fennel, sage, rosemary, bay, garlic, one star anise pod, maybe lemon zest towards the end...
