Le Canele - Pastry from Bordeaux - where in Toronto?

Andrew H | May 4, 2006 04:14 PM

I have been trying to find this particular pastry called Le Canele here in Toronto for months. Can anyone help?!?

The closest I came is Patachou's gracious owner who has kindly allowed me to pester her every time I go there to remind her to decide whether or not to add it to her offerings (she said she is from Bordeaux where the pastry is from but her pastry chef is French Basque - try his gateau Basque). If you want to know more about les caneles, go to the following wonderful blog (see link).

A canele has been described as a "portable creme brulee." However, I think that actually does not accurately reflect it. A proper canele has a caramelized crusty exterior that yields to a custardy interior perfumed with vanilla and a splash of rum. In NYC where I used to live, the bakery at Balthazar used to make a handful every morning. Since I moved back to Toronto, I have not had any luck finding it.

HELP!!! Thanks!!
