This past Saturday night we entertained friends from Vancouver at Laboratorio. As much as I have raved about our dinner there early last November this was Roberto's finest. Also, his most imaginative.
One dish in particular stood out: simplistically, scrambled eggs with black truffles and reggiano in a spoon. One orgasmic bite that is among the most delicious and flavorful of any that I have ever had.
I've talked about Laboratorio at length on here in the past. But Roberto had no less than five of what I would call "Great Dishes." (i.e. among the best of their kind that I have ever had anywhere) I sincerely believe that he is growing ever more creative, perfecting some of the imaginative combinations that he has been exploring with for the past several years. Still, along with Maestro, I believe these two to be America's best Italian restaurants and the equal of what I have found in Italy. Saturday night was confirmation for this.
When I organize the Lab dinner for late October/early Nov. I'll ask him to include this dish. (I'm also thinking we should do 14 or 15 courses and really go over the top!) I now believe that this will even exceed last year's memory!
