Forma de Gusto, despite its Italian-sounding name and wide choice of pastas/pizzas, is actually typical local bistro which offers a selection of international cuisine, including Slovakian ones.
What we tried:
- Balkan-style beef soup - quite a comforting dish: a mound of chopped rare beef, to which a strong beef consomme was poured over, partially cooking the beef, but leaving enough rare bits to give the meat a delicious bite.
- Pork tenderloin, with two-flavoured sauces (a spicier mustard-based one, and a sweet, red-wine/berries-flavoured one) - one thing I find the Slovaks do very well are grilled meats. They always managed to get the texture and level of cooking done just right.
- Grilled beef sirloin with boiled potatoes, "chile con carne" (which tasted more like Chinese sweet-sour sauce, and had chopped pineapples!) - the grilled beef was nice, but the very sweet sauce was a surprise.
Be prepared to wait. The kitchens at Forma de Gusto can take 45 minutes or more to deliver the food to your table during peak meal periods. I've been forewarned that pizzas take more than one hour.
