I live in New York City, and friends who hail from other parts of the country (particularly Texas/Oklahoma/SoCal etc) are always complaining that New York does not have real, true Mexican food. I don't doubt that this is true, but I'm wondering what specifically differs in Mexican cuisine from the southwest to the northeast.
About a year ago I moved to a Brooklyn neighborhood with a sizable Mexican population, and the local shops are full of curious and exotic looking ingredients, so I'd bet that there is some great Mexican food being cooked in people's homes. What am I missing when I go to a Mexican restaurant or sidewalk cart in NYC?
