Saw your post from last week about the need for spleen. To fill your spleen jones, try:
Han Shul Bat (Hal Shul Bat?) on 5th just west of Vermont. Found via J. Gold's K-town top-40. (I'd been to a few oxbone soup joints before. Mr. Gold is right - this is by far the best).
Order: oxbone soup with *mixed*.
This comes with: flank, brisket, spleen, tripe, and intestine. Beautiful, beautiful, every one and all. Flavored with some scallions, lots of spicy sauce, and various panchans, you get - a clear, intense, mineral-y soup flavor, very bracing. With various pickle-y burns. And, most of all - intensely organny spleen, pleasant tripe, and the softest, lusciousest intestine I've yet had for under $10.
Better than any intestine prep I've had in San Gabriel.
