I am planning a trip to the Tampa area in March and I am looking for an Italian bakery that makes a layer cake which I can describe but I am not positive I have the correct name.
The cake I am looking for is a sponge cake soaked in rum to make it moist then layered with a custard that has cherries mixed in with another layer of sponge cake then a layer of whipped cream and another layer of sponge cake and a layer of chocolate custard with bananas mixed in and a final sponge cake layer with a thick whipped cream style frosting.
I had this cake as a child from a local bakery in Encino California which has now gone out of business and the only recipe I can find that sounds similar is the Zuppa Inglese.
Does this sound familiar to anyone?
I would love to get one while I am there.
