I had the following pairing last weekend as a course of a tasting menu:

Mole
MARY’S CHICKEN, COCOA BEAN, CHILE, DATE, ALMOND
1994 BLANDY’S MALSMEY MADEIRA SPAIN

It worked wonderfully!
