Have 12 lovely jumbo boned quail and some sweetbreads. Want to stuff the quail with sweetbreads and probably roast in lieu of braise. Any ideas on oven temperatures and approximate cooking times? I am very comfortable with grilled quail and serve them on the low med. rare...just not sure of roasting high heat when stuffed or braising. thanks for any help.
