Just thought I would mention this since I have been using it for a while now and plan to return soon for more. I went into Biancardi for a few slices of pancetta. They asked me if I wanted to try their own, or the commercial pancetta. After cooking with their own, house-cured version, I hope to never have to go back to the commercial stuff. It is sold in a thick wedge, vacuum packed. The seasoning might be Calabrian in origin, as it is heavy on the peperoncino, but the meat itself is not spicy.
