I am interested in tackling beet gelee, but I can't find any information on how to make homemade beet juice. I do not have a juicer, but I do have a cuisinart and a food mill. Can you cook the beets, finely puree them and then strain them over cheesecloth or a coffee filter to extract the juice? I am guessing that this might require an additional step of reducing the beet juice. My concern is that this technique might not yield very much liquid, since beet puree doesn't seem that watery to me.
