I guess the Moosewood in Ithaca is almost the definitive case for this type. The best I know in nyc is Angelika's Kitchen. But there used to a solid, almost diner-like version. Bean, rice, tofu, tempeh, stir fried vegetables, various yam and squash dishes, great imaginative varieties of sauces to pour over vegetable, whole wheat bread. Before Court and Smith Sts went all upscale there was a great one in that neighborhood. Don't remember the name of it. Finding one of these in Brooklyn would be nice. But I would make some effort to get to a classic.
