Hidden Gems on LV Strip?

We have 2 open nights to dine in LV this coming weekend. Already eating at Delmonico (our personal favorite) and Daniel Boulud Brasserie.

Looking for recommendations that might not be as talked about here, but have consistantly good food. Any price considered but not looking for places which require fancy dressing up. Casual would be preferred since we're trying to pack light for this short trip (I know, lots of people don't bother to dress up in LV but we personally would feel odd about not looking good for a dinner in someplace like Picasso).

If we head OFF strip, we already know that we'll wind up at Rosemary's and LOS. It's only ON strip we need recs for.

We've already had fine meals at Bouchon, Mesa Grill, Commander's Palace, Canaletto and Pinot Brasserie in the past, so we're like to try new places.
