Eastern(27 Eldridge,near Canal),Relatively new.This half basement tiny shop makes very rare Ran-chou(SP?) style hand-pulled noodle soup.(Mar co polo has similler stuff.But it's a tin blade hand carved, or useing pasta machine.Ten-jin in Flushing has also same tin blade stuff.Both shops are good.)There are only a couple of people(looks like husband and wife)in the store.As soon as the chef took order,He picked up a dough and started making noodles from scratch useing his hands.He was stretching the dough again and again,sometimes hitting a kitchen board with the dough and making a big noise like "Bang!!" (It's really fun to watch).A couple of minutes later,the dough turned to be Udon-like noodles(but thinner and taste very different).Then noodles were cooked nice and firm,come in the soy sauce based brown broth(bland taste) with greens.Despite this bland taste broth,noodles are really flavorful,nice fresh taste.there is no English menu here and they don't speak English(but very friendly).You have no idea what is on the menu.As far as I know,They serve noodle with beef or ox tail which are tasteless slices of meat.Best dish here is simply plain noodle soup.Most local chinese people are eating that.Simply ask slowly "Noodle soup,no meat".They'll understand.Costs $3.(I don't speak chinese,I just can understand some chinese characters.)Don't forget to stop by SUN MING JAN meat store to buy home made chinese sausage.This place looks like chinese version of Kurowycky Meat Products in the E.village.It's worth to take a look.111 hester,near eldridge.
