I've never cooked grass-fed beef before, so this is my jumping-off point. I bought two flat-iron steaks this morning from the farmer, and they are from 100% grass-fed cattle. His only advice was to cook it for less time than corn-fed beef. Can anyone offer me any other hints/tips to successfully grill these steaks? I'll be aiming for medium-rare. They are not very thick, maybe 1/2 to 3/4 inch. If they were grocery store steaks, I'd season them with S&P and grill them 4-5 minutes per side. Two minutes per side just seems like it's not really cooking at all! Should I marinate them? Anything else I should take into consideration?
