Recently, I found myself witha ton of beets. I had been roasting them, made soups, but was getting bored and my SO does not love them in salads. So I grated a raw peeled beet in the food processor with the grating disc in it, followed by a few carrots. I have tossed the mixture with mayo and then another time with olive oil, lemon juice. Even just a dab of mayo goes a long way. The salad has a wonderful crunch and a beautiful color. I have now been eating it every day at lunch. Do you have other grated beet salad ideas?
