I didn't grow up eating ashkenaz foods, so my potato kugel experiences are limited. The good- at a friend's house - layer found out it had startling amounts of oil. The bad- the stuff that tasted like wet newspaper at a shul kiddush.
Anyway, I promised my husband I would make potato kugel for sukkot.
And....I forgot to buy potatoes (oops)
Ended up using frozen hash brown shredded potatoes (only ingredient was potatoes). Mixed half a bag of potato shreds with 2 whole eggs, 1 egg white, a splash of oil, salt, pepper, and 2 onions (sautéed in water).
It came out brown and crispy....and really really REALLY good!
Dead easy and only one dirty bowl!
