Bought a bunch of garlic scapes at the market yesterday -- I read I could make pesto out of these, so I tried it -- but it was terrible! I read that garlic scapes had garlicky flavor without raw garlic's hot bite -- but if anything this was much <i>harsher</i> than raw garlic -- even sauteed, these guys were hard to eat. What did I do wrong? Were they just too mature? They were curly, but not at all spiralled.
