French Panini Bread

Hello all,

Although I do know that people will say "panini = sandwich" I just wanted to clarify first and am talking specifically about the bread they use on the street side shops everywhere in France (at least from what I recall when I was in Toulouse/Normandy area).

I was looking to remake them at home and all I remember that they were narrow pieces of bread that seemed pale but then crisped up beautifully in the panini press.

Sorry if there's an obvious answer.
