Fredo's Phillys, After Dan (Pasadena)

In the past two weeks we've done take out twice from Fredo's Phillys - am able to confirm that Dan has sold out his half of the business (according to the woman at the counter), have no idea what he's doing now, but I do hope that he'll pop-up again soon!

Regarding the food:
Both times ordered the basic cheesesteak with grilled onions, white American cheese.
- First time the sandwich was heavily peppered (er, with black pepper, not with bell peppers) and seemed light on the cheese.
- Second time the flavor was right (not too much pepper, a good amount of cheese), but there was quite a bit of gristle.

Now, even while Dan was there I occasionally had a "dud" sandwich (usually when he was breaking in a new cook), so I'm not going to pitch a hissy fit (and I did call and let the counter woman know that she might want to have the cook be a bit more picky - she was receptive but did not offer to replace) and that.

But, well, while the sandwiches were more than serviceable, they just didn't seem quite right - I have no idea how much of the taste was based on my missing Dan's friendly, welcoming face, though, so maybe the sandwiches are actually better and I'm not tasting that - or maybe the sandwiches are just okay and I'm being generous because of emotions.

Has anyone else been, post-Dan, who can give more feedback?
