Asthetically they are beautiful - irregular natural casings, tied and wrapped nicely, somewhat larger than I am used to - they look great hanging from my pot rack.
To my taste, they jumped the gun on this release. I prefer them a little drier than they are currently, and as such will hang them for a few more weeks.
The texture is fairly rough for salami this size, which I like, but I find them underseasoned, and lacking the tangy acidity that I look for in this sort of thing. The overall impression is rather rich, a bit gamey, with a strong dose of garlic, and little else. Don't get me wrong, this is clearly artisinal salame, and I love what they are doing, I'd just like them to be a little more assertive. Looking forward to the release of some of their other salumi.
