Fondant Folks - how far in advance can I make them?

So I'm making the traditional "buche de noel" for Christmas dessert and I found a recipe that has "woodland folk" made out of fondant sitting on the cake. I have to do this for the pure hilarity of it all (you have to know my family). Anyway, I purchased a container of fondant (rolled icing)as per the instructions. I need to dye it and make the little guys. How far in advance can I do this without them falling apart? Can I just set them out to dry a few days in advance and them put them on the cake the day of? Any advice would be appreciated. Thanks and Happy Holidays to everyone!
