Fine Dining in Paris

My boyfriend and I will be travelling to Paris in the upcoming weeks. While there, I would like to take him out to a special restaurant to celebrate his birthday. I've made reservations at Taillevent but, after careful consideration, have come to the decision that I just cannot afford it.
I'm considering l'Angle du Faubourg, La Truffiere, Les Bouquinistes or Le Jardin des Cygnes, all relatively the same in terms of price points (70-100 Euro tasting menus). In general, I have read positive reviews of L'Angle du Faubourg; the others all have mixed reviews.

I would be so grateful for any suggestions. It has been a dream of mine for so long to travel to Paris and I want it to be incredibly special.
