I'm a reasonably dedicated athlete and have a big season coming up. I also live in one of the hippiest towns in America. The majority of my friends are vegetarian, as is my girlfriend. I love to eat with them, so I'm trying to figure out how to adapt my diet to their restrictions. The one challenge I'm having is protein.
I have nothing against vegetarian sources of protein, but I do have to keep my scope narrow - I get full before I can eat enough quinoa or rice and beans, so I have to look at more efficient vehicles. Tempeh isn't particularly healthy in volume, and I don't care for seitan or TVP. I'm basically sticking to tofu, which I enjoy and respect as much as I can given it's competing for my favor with the delicious animal kingdom.
What are your recommendations for dishes where tofu really shines? I'm afraid I'm going to get tired of it pretty quick, and am looking for lots of variety without feeling like I'm having a lesser version of a traditionally animal-based dish.
