I feel very proud of myself and a bit gloat-y. I bought amazing ground turkey from my CSA in an attempt to replicate my friend's fantastic turkey (and vegetable) burgers. While doing that, I decided to make veggie burgers at the same time, since I was prepping lots of different vegetables and my partner's vegetarian. I did all of it by intuition, and used whatever I had on hand. A rough outline is below.
One cup lentils (dry)--boil until tender.
1/2 cup wheatberries (dry)--boil until tender
2 shallots, sliced and fried
1-2 grated carrots
beet green stalks cut into 1/4 inch chunks
1 red pepper, minced
2 tbsp soy sauce
2 tsp spicy/sweet fig mustard
black sesame seeds
1 tsp toasted cumin seeds
aleppo pepper, salt, pepper
2 egg whites
Mash everything up, shape into patties, then bake at 400 for about 10 minutes.
