I need some Evernote hints for saving recipes

Electronic devices are becoming an integral part of my cooking. I have an iPod, and have the Epicurious app and the Cooks Illustrated app. I enjoy using them for cooking. Recently, Michael Ruhlman suggested that some chefs use Evernote to keep track of notes for recipes, actual whole recipes and the like. So, now I have the Evernote app.

I would love to figure out how to add notes into Evernote. I've downloaded it, but I can' really find any comprehensive "help" on how to specifically use it. I'd like to be able to copy recipes from here, and the other recipe apps I'm using, for my own furture use. And I'd love to be able to modify them with my own notes as to what I liked, what worked well, and what I might modify the next time. I just am not finding any specific information on how to do these things. Can anyone point me in the right direction?
