Ethnic restaurant recs for Northern/Central OC?

I'm visiting in North OC from NYC. I haven't spent much time here for a long time and would like to know about some of the Mexican, Thai, Vietnamese, etc. places that seem to be in their prime now. I went to Thai Specialty on Imperial in Brea (across from Home Depot) that I used to think was wonderful, and it was generally disappointing. Has it changed owners? There are others I used to know, but where are the places to go now? I also had lunch at El Farolito in the Placita in Placentia today. That was good, at least the carnitas were very satisfying. But I'd like to know some new places.

I live in Little Colombia in Queens so we have lots of South American restaurants, but most of the Mexican and Thai places don't measure up (in my recollection). We're getting lots of Vietnamese, but it's still not OC. Any other interesting places that are not in these ethnic groups are also welcome. If I don't have time to try them all while I'm here, I'll pass them on to my family. Thanks and happy holidays.
